Mediterranean Pickled Cucumber, Onion & Bell Pepper Salad

Ingredients (serves 4–6)

  • 2 medium cucumbers, thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 bell peppers (red, yellow, or orange), thinly sliced
  • ½ cup white vinegar or red wine vinegar
  • ¼ cup water
  • 2 tbsp olive oil
  • 2 tbsp sugar or honey
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • Optional: 1 clove garlic, minced
  • Optional garnish: fresh parsley or dill

Instructions

1. Prepare the Vegetables

  1. Thinly slice cucumbers, onion, and bell peppers.
  2. Place in a large bowl.

2. Make the Pickling Brine

  1. In a small bowl, whisk together vinegar, water, olive oil, sugar, salt, pepper, and oregano.
  2. Add garlic if using.

3. Combine & Chill

  1. Pour brine over vegetables and toss to coat.
  2. Cover and refrigerate at least 1 hour (overnight for deeper flavor).

4. Serve

  • Garnish with fresh parsley or dill.
  • Serve chilled as a side dish with grilled meats, seafood, or Mediterranean spreads.
