Slow Cooker Pineapple Pork

Ingredients (serves 4–6)

  • 2–3 lb (900 g–1.4 kg) pork shoulder or pork butt, trimmed and cut into chunks
  • 1 can (20 oz / 565 g) pineapple chunks, drained (reserve juice)
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • ½ cup pineapple juice (from the can)
  • ¼ cup soy sauce
  • 2 tbsp brown sugar or honey
  • 1 tsp ground ginger (or 1 tbsp fresh grated)
  • ½ tsp black pepper
  • Optional: 1–2 tbsp cornstarch for thickening sauce
  • Optional garnish: green onions, sesame seeds

Instructions

1. Prepare the Pork

  • Pat pork dry and season lightly with pepper.
  • Optional: Sear pork in a hot skillet 2–3 minutes per side for extra flavor.

2. Assemble in Slow Cooker

  1. Place pork, pineapple chunks, and sliced onion in the slow cooker.
  2. In a small bowl, mix pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  3. Pour sauce over pork.

3. Cook

  • Cover and cook LOW 6–8 hours or HIGH 3–4 hours, until pork is tender and easily shredded.

4. Optional Sauce Thickening

  1. Remove pork and pineapple chunks.
  2. Pour cooking liquid into a small saucepan.
  3. Mix 1–2 tbsp cornstarch with a little water to make a slurry, then whisk into the liquid.
  4. Simmer until thickened.
  5. Pour over pork when serving.

5. Serve

  • Over steamed rice, quinoa, or noodles
  • Garnish with chopped green onions and sesame seeds
  • Optional side: stir-fried vegetables or roasted broccoli

Flavor Variations

  • Spicy pineapple pork: Add 1 tsp crushed red pepper or sriracha
  • Hawaiian style: Add sliced bell peppers and a splash of coconut aminos
  • Slow-cooker sliders: Shred pork and serve on small buns with extra sauce
