Southern Banana Cobbler
Ingredients (serves 6–8)
Banana Filling
- 4–5 ripe bananas, sliced
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional)
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp cornstarch
Cobbler Topping
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1½ tsp baking powder
- ¼ tsp salt
- ¾ cup milk
- ½ cup (1 stick) butter, melted
Optional Add-ins
- Chopped pecans or walnuts
- Caramel drizzle
- A splash of rum or bourbon
Instructions
- Preheat oven to 350°F (175°C).
- Prepare banana filling
In a bowl, gently toss bananas with brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, vanilla, and cornstarch. Set aside. - Make the batter
In another bowl, whisk flour, sugar, baking powder, and salt. Stir in milk until smooth. - Assemble
- Pour melted butter into a 9×9-inch baking dish.
- Pour batter directly over butter without stirring.
- Spoon banana mixture evenly over the batter. Do not mix.
- Bake
- Bake uncovered for 40–45 minutes, until golden brown and bubbly.
- Rest & Serve
- Let cool 10 minutes.
- Serve warm with vanilla ice cream or whipped cream.
