Sweet Alabama Pecan Bread

Ingredients

  • 1 cup (120 g) all-purpose flour

  • 1 cup (100 g) granulated sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ tsp ground cinnamon (optional for extra flavor)

  • 2 large eggs

  • ½ cup (120 ml) unsalted butter, melted and slightly cooled

  • ½ cup (120 ml) buttermilk or milk

  • 1 tsp vanilla extract

  • 1 cup (120 g) chopped pecans, toasted if desired


Instructions

  1. Preheat & Prep

    • Preheat your oven to 350°F (175°C).

    • Grease and flour a 9×5-inch loaf pan, or line with parchment paper.

  2. Mix Dry Ingredients

    • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

  3. Mix Wet Ingredients

    • In another bowl, whisk eggs, melted butter, milk, and vanilla until smooth.

  4. Combine

    • Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.

    • Fold in the chopped pecans.

  5. Bake

    • Pour the batter into the prepared loaf pan.

    • Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool

    • Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.


Optional Enhancements

  • Drizzle a simple glaze of powdered sugar and milk over the top for extra sweetness.

  • Add ½ cup raisins or chocolate chips for a variation.

  • Sprinkle additional chopped pecans on top before baking for a crunchy finish.
