Here’s a healthy, cozy Baked Apple Cinnamon Cottage Cheese Breakfast Bowl recipe 🍎🥣—warm, lightly sweetened, and packed with protein to start your day right.

Ingredients (serves 2–3)

  • 1 large apple, diced (any sweet variety like Honeycrisp or Gala)
  • 1 tsp cinnamon
  • 1 tbsp butter or coconut oil
  • 1 cup cottage cheese (full-fat or low-fat)
  • 1 large egg
  • 2 tbsp almond flour or oats (for texture)
  • 1–2 tsp sweetener (maple syrup, honey, or a low-carb option)
  • ½ tsp vanilla extract
  • Optional toppings: chopped nuts, raisins, extra cinnamon, or a drizzle of nut butter

Instructions

1. Preheat oven

  • Preheat oven to 350°F (175°C).
  • Grease two small ramekins or an oven-safe bowl.

2. Cook the apples

  • In a small skillet, melt butter over medium heat.
  • Add diced apples and cinnamon, and sauté 3–4 minutes until slightly softened.
  • Optionally, add a touch of sweetener.

3. Make the custard

  • In a bowl, whisk together cottage cheese, egg, almond flour (or oats), sweetener, and vanilla extract until smooth.

4. Assemble the bowls

  • Divide cooked apples between ramekins.
  • Pour cottage cheese mixture over the apples.
  • Sprinkle extra cinnamon on top if desired.

5. Bake

  • Bake 20–25 minutes until the tops are lightly golden and the custard is set.

6. Serve

  • Let cool 5 minutes before eating.
  • Add optional toppings like nuts, raisins, or a drizzle of nut butter.

💡 Tips & Variations

  • Make it low-carb: use erythritol or monk fruit sweetener instead of maple syrup/honey.
  • Extra protein: stir in a scoop of protein powder to the custard.
  • Other fruits: swap apples for pears or berries.
  • Make-ahead: prep in silicone muffin cups for grab-and-go breakfast.

This is warm, creamy, and lightly sweet, perfect for chilly mornings.

If you want, I can give a single-bowl microwave version that’s ready in under 5 minutes for busy mornings. Do you want me to do that?
