Honey Mustard Chicken with Roasted Asparagus and Cheese

Ingredients (serves 2–4)

For the chicken:

  • 2–4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2–3 tbsp honey
  • 2–3 tbsp Dijon mustard (or yellow mustard if you like it milder)
  • 1 tsp garlic powder or 2 cloves garlic, minced
  • 1/2 tsp smoked paprika (optional for a subtle kick)

For the asparagus:

  • 1 bunch asparagus, trimmed
  • 1–2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 tsp garlic powder (optional)
  • 1/4 cup shredded cheese (Parmesan, cheddar, or mozzarella work well)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prep the chicken:
    • In a small bowl, mix honey, mustard, garlic, olive oil, and paprika.
    • Season chicken with salt and pepper. Brush or drizzle honey mustard mixture generously over both sides.
  3. Prep the asparagus:
    • Place asparagus on the same baking sheet (or a separate one if needed).
    • Drizzle with olive oil, sprinkle with salt, pepper, and garlic powder. Toss to coat evenly.
  4. Roast:
    • Place chicken and asparagus in the oven. Roast for 18–25 minutes (depending on thickness of chicken) until chicken reaches 165°F / 74°C internally and asparagus is tender.
  5. Add cheese:
    • In the last 3–5 minutes of roasting, sprinkle shredded cheese over asparagus (and chicken if desired) and return to oven just until melted and slightly golden.
  6. Serve:
    • Plate chicken with roasted asparagus on the side. Spoon any extra honey mustard from the pan over the chicken.

Tips & Variations

  • For extra flavor, marinate the chicken in honey mustard for 30 minutes before roasting.
  • Add cherry tomatoes or thinly sliced bell peppers to roast with asparagus for color and sweetness.
  • Swap asparagus for green beans or broccoli if you prefer.
