Crispy Chicken Tenders

Ingredients (serves 4):

  • 1 lb (450g) chicken tenders (or chicken breast cut into strips)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (panko works best for extra crunch)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional, for flavor)
  • 1/2 tsp garlic powder
  • Oil for frying (vegetable or canola)

Instructions:

  1. Prep the chicken:
    Pat the chicken tenders dry with paper towels. This helps the coating stick better.
  2. Set up your dredging station:
    • Bowl 1: Flour mixed with 1/2 tsp salt and 1/4 tsp pepper.
    • Bowl 2: Beat the eggs.
    • Bowl 3: Breadcrumbs mixed with paprika, garlic powder, and remaining salt/pepper.
  3. Coat the chicken:
    • First, dredge each tender in the flour, shaking off excess.
    • Dip into the egg.
    • Finally, coat with the seasoned breadcrumbs, pressing lightly to stick.
  4. Cook the tenders:
    • Option 1 – Frying: Heat 1/2 inch of oil in a skillet over medium heat. Fry chicken tenders 3–4 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C).
    • Option 2 – Baking: Preheat oven to 425°F (220°C). Place tenders on a parchment-lined baking sheet. Spray lightly with cooking oil. Bake 15–20 minutes, flipping halfway, until golden and cooked through.
  5. Serve:
    Serve hot with your favorite dipping sauces like honey mustard, ranch, or BBQ sauce.
