Here’s a Loaded Baked Potato with Steak Bites—crispy potatoes, juicy steak, and all the classic toppings. It’s hearty, indulgent, and surprisingly easy.


🥔🥩 Loaded Baked Potato with Steak Bites

Ingredients (2–4 servings)

Baked Potatoes

  • 2–4 large russet potatoes
  • Olive oil
  • Salt

Steak Bites

  • 1 lb sirloin, ribeye, or NY strip, cut into bite-size cubes
  • Salt & black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced

Toppings

  • Shredded cheddar cheese
  • Sour cream
  • Butter
  • Chopped bacon
  • Green onions or chives

Optional extras:

  • Blue cheese crumbles
  • Sautéed mushrooms
  • Steak sauce drizzle

Instructions

  1. Bake Potatoes
    • Heat oven to 425°F (220°C).
    • Scrub potatoes, dry, poke with a fork.
    • Rub with olive oil and salt.
    • Bake 50–60 minutes, until crispy outside and fluffy inside.
  2. Cook Steak Bites
    • Pat steak dry and season with salt, pepper, garlic powder, and paprika.
    • Heat oil in a hot skillet over medium-high.
    • Add steak in a single layer.
    • Sear 2–3 minutes per side.
    • Add butter and garlic; toss 30 seconds.
    • Remove from heat.
  3. Assemble
    • Split potatoes open.
    • Fluff insides with butter.
    • Add steak bites.
    • Top with cheese, bacon, sour cream, and green onions.
  4. Optional Melt
    • Place loaded potatoes back in oven 5 minutes to melt cheese.

Tips & Variations

  • Extra crispy skin: Bake potatoes directly on oven rack
  • Air fryer potatoes: 400°F for 40–45 minutes
  • Garlic butter drizzle: Spoon steak pan butter over potatoes
  • Spicy: Add jalapeños or chipotle sauce
  • Surf & turf: Add garlic shrimp instead of bacon
