Baked spinach

Here are a couple of baked spinach options—one simple and one creamy. Both are easy and delicious 🌿✨

Simple Garlic Baked Spinach

Ingredients

  • 1½ lbs fresh spinach (or 2 bags baby spinach)
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • Salt & black pepper
  • ¼ cup grated Parmesan (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté garlic in oil until fragrant (30 seconds).
  3. Add spinach, toss just until wilted.
  4. Transfer to baking dish, season, top with Parmesan.
  5. Bake 15–20 minutes until tender and lightly golden.

Creamy Baked Spinach (Spinach Gratin)

Ingredients

  • 1½ lbs fresh spinach, wilted & drained
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup cream cheese (or ricotta)
  • ½ cup shredded mozzarella
  • ¼ cup Parmesan
  • Salt & pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Melt butter, sauté garlic.
  3. Stir in cream, cream cheese, half the mozzarella, Parmesan, seasoning.
  4. Fold in spinach.
  5. Transfer to baking dish, top with remaining mozzarella.
  6. Bake 20–25 minutes until bubbly and lightly browned.

Serving Ideas

  • Side for baked chicken, salmon, or steak
  • Spoon over toast or pasta
  • Add artichokes or mushrooms for extra flavor
