Simple Garlic Baked Spinach
Ingredients
- 1½ lbs fresh spinach (or 2 bags baby spinach)
- 2 tbsp olive oil or butter
- 3 cloves garlic, minced
- Salt & black pepper
- ¼ cup grated Parmesan (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Sauté garlic in oil until fragrant (30 seconds).
- Add spinach, toss just until wilted.
- Transfer to baking dish, season, top with Parmesan.
- Bake 15–20 minutes until tender and lightly golden.
Creamy Baked Spinach (Spinach Gratin)
Ingredients
- 1½ lbs fresh spinach, wilted & drained
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup cream cheese (or ricotta)
- ½ cup shredded mozzarella
- ¼ cup Parmesan
- Salt & pepper
- Pinch of nutmeg (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Melt butter, sauté garlic.
- Stir in cream, cream cheese, half the mozzarella, Parmesan, seasoning.
- Fold in spinach.
- Transfer to baking dish, top with remaining mozzarella.
- Bake 20–25 minutes until bubbly and lightly browned.
