Blueberry cobbler

Here’s a classic, easy blueberry cobbler—sweet, bubbly, and perfect with ice cream 🍇🥧


Blueberry Cobbler

Ingredients

For the filling

  • 4 cups fresh or frozen blueberries
  • ½ cup sugar (adjust to taste)
  • 1 tbsp cornstarch (for thickening)
  • 1 tsp lemon juice
  • ½ tsp vanilla extract

For the topping

  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 6 tbsp unsalted butter, cold and cut into small pieces
  • ¼–½ cup milk (enough to make a soft batter)
  • Optional: ½ tsp cinnamon or nutmeg

Instructions

  1. Preheat oven
    • 375°F (190°C). Grease a 9×9-inch baking dish.
  2. Prepare filling
    • In a bowl, mix blueberries, sugar, cornstarch, lemon juice, and vanilla.
    • Pour into prepared baking dish.
  3. Make topping
    • In another bowl, combine flour, sugar, baking powder, salt, and cinnamon.
    • Cut in butter until mixture resembles coarse crumbs.
    • Stir in milk until a thick, slightly sticky batter forms.
  4. Assemble cobbler
    • Drop spoonfuls of batter over the blueberries. It’s okay if some fruit peeks through—this creates the classic cobbler look.
  5. Bake
    • Bake 35–40 minutes until topping is golden and blueberries are bubbly.
  6. Serve
    • Let cool 5–10 minutes. Serve warm with vanilla ice cream or whipped cream.

Tips & Variations

  • 🍋 Add a teaspoon of lemon zest for extra brightness.
  • 🌾 Swap half the flour for oat flour or almond flour for texture.
  • 🍓 Mix in other berries or stone fruit (raspberries, peaches) for variety.
  • 🥄 Brush topping with a little melted butter and sprinkle sugar for a shiny, crunchy top.
