Ingredients (serves 4–6)

For the barbacoa beef:

  • 2–3 lbs beef chuck roast (or brisket)
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1–2 chipotle peppers in adobo sauce (adjust to taste)
  • 2 tbsp adobo sauce (from the chipotle can)
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp ground cloves
  • 1 tsp smoked paprika
  • 1 tsp salt, plus more to taste
  • ½ tsp black pepper
  • ½ cup beef broth or water
  • ¼ cup apple cider vinegar or lime juice
  • 1 medium onion, quartered

For serving:

  • Corn or flour tortillas
  • Fresh cilantro, chopped
  • Diced onions
  • Lime wedges
  • Optional: salsa, avocado, radish slices, or pickled jalapeños

Instructions

1. Prep and sear the beef

  • Cut the beef into large chunks.
  • Heat oil in a large skillet over medium-high heat. Sear beef on all sides until browned (this adds flavor, but you can skip if in a hurry).

2. Blend the sauce

  • In a blender, combine garlic, chipotle peppers, adobo, cumin, oregano, cloves, smoked paprika, salt, pepper, beef broth, vinegar, and half the onion. Blend until smooth.

3. Cook the barbacoa

Slow cooker method:

  • Place seared beef in the slow cooker. Pour the blended sauce over it. Add remaining onion.
  • Cook on low for 8 hours or high for 4–5 hours, until beef is tender and shreds easily.

Oven method:

  • Preheat oven to 300°F (150°C). Place beef and sauce in a covered Dutch oven. Cook 3–4 hours until tender.

4. Shred the beef

  • Remove beef and shred with two forks. Mix back with sauce to keep it moist.

5. Assemble tacos

  • Warm tortillas.
  • Top with barbacoa beef, diced onions, cilantro, and a squeeze of lime. Add any optional toppings.

Tips

  • Extra smoky flavor: Add a chipotle pepper or smoked paprika to taste.
  • Make ahead: Barbacoa tastes even better the next day as the flavors meld.
