Here’s a rich, creamy Cherry Cheesecake Bars recipe with a buttery crust and classic cherry topping 🍒✨

Cherry Cheesecake Bars

Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ tsp cinnamon (optional)
  • ½ cup melted butter

Cheesecake Filling

  • 16 oz (2 blocks) cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs (room temp)
  • 1 tsp vanilla extract
  • ½ cup sour cream (or Greek yogurt)

Topping

  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat oven to 325°F (165°C). Line a 9×13 pan with parchment.
  2. Make crust:
    Mix crumbs, sugar, cinnamon, and butter.
    Press firmly into pan.
    Bake 10 minutes, then cool slightly.
  3. Make filling:
    Beat cream cheese and sugar until smooth.
    Add eggs one at a time, mixing gently.
    Mix in vanilla and sour cream.
  4. Bake:
    Pour filling over crust.
    Bake 35–40 minutes, until center is just set.
  5. Cool:
    Let cool to room temp, then chill 4 hours or overnight.
  6. Top & slice:
    Spread cherry pie filling on top.
    Cut into bars with a clean, hot knife.

Tips for Perfect Bars

  • Don’t overmix—prevents cracks
  • Bake low and slow for creamy texture
  • Chill completely before cutting

Variations

  • Homemade cherry topping: Use fresh or frozen cherries + sugar + cornstarch
  • Chocolate crust: Swap graham crackers for chocolate cookies
  • Almond twist: Add ½ tsp almond extract to filling
