Coconut banana cookies

Here’s a simple coconut banana cookies recipe 🍌🥥
Soft, lightly sweet, and easy to make.

Ingredients (makes ~10–12 cookies)

  • 2 ripe bananas (mashed)
  • 1 cup shredded coconut (unsweetened works best)
  • ½ cup rolled oats (optional, for texture)
  • 1–2 tbsp honey or maple syrup (optional, depending on sweetness)
  • ½ tsp vanilla extract (optional)
  • Pinch of salt
  • Optional add-ins: dark chocolate chips, chopped nuts, cinnamon

Instructions

  1. Preheat oven to 175°C / 350°F. Line a baking tray with parchment paper.
  2. Mash bananas in a bowl until smooth.
  3. Stir in coconut, oats (if using), salt, and any optional ingredients.
  4. Scoop spoonfuls onto the tray and gently flatten.
  5. Bake 12–15 minutes, until lightly golden on the edges.
  6. Let cool for a few minutes before eating.

Tips & Variations

  • For crispier cookies, bake 2–3 minutes longer.
  • For extra chewy cookies, add a tablespoon of peanut butter.
