Strawberry Crunch Stuffed Cheesecake

Ingredients

Crust

  • 2 cups Golden Oreos or vanilla sandwich cookies, crushed
  • 5 tbsp melted butter

Strawberry Crunch Filling

  • 20 Golden Oreos, crushed
  • ½ cup freeze-dried strawberries, crushed
  • 4 tbsp melted butter

Cheesecake Filling

  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 3 large eggs (room temp)
  • 1 tbsp vanilla extract
  • ½ cup strawberry preserves or strawberry puree
  • Optional: a few drops pink food coloring

Instructions

1. Prep

  • Preheat oven to 325°F (165°C).
  • Line the bottom of a 9-inch springform pan with parchment and grease sides.

2. Make the Crust

  • Mix crushed cookies and melted butter.
  • Press firmly into the bottom of the pan.
  • Bake 10 minutes, then cool.

3. Make Strawberry Crunch

  • Mix Golden Oreos, freeze-dried strawberries, and butter.
  • Set aside.

4. Cheesecake Batter

  • Beat cream cheese and sugar until smooth.
  • Add sour cream and vanilla.
  • Mix in eggs one at a time, just until combined.
  • Stir strawberry preserves into half the batter (leave the other half plain).

5. Assemble

  • Pour ½ plain batter over crust.
  • Sprinkle ½ strawberry crunch evenly.
  • Pour strawberry batter on top.
  • Sprinkle remaining crunch.
  • Finish with remaining plain batter and smooth top.

6. Bake

  • Place pan in a water bath (recommended).
  • Bake 65–75 minutes, until edges are set and center slightly jiggles.
  • Turn oven off, crack door, cool 1 hour.
  • Refrigerate at least 6 hours (overnight best).

  • Whipped cream
  • Strawberry glaze
  • Extra strawberry crunch crumbs
  • Fresh strawberries

  • Don’t overmix after adding eggs (prevents cracking).
