Salisbury Steak with Mushroom Gravy

Posted on October 28, 2025 by Admin
Here’s a thorough and delicious way to make Salisbury Steak with Mushroom Gravy from scratch. I’ll include step-by-step instructions, tips for juicy patties, and a rich mushroom gravy.

Ingredients

For the Salisbury Steaks:

  • 1 lb (450 g) ground beef (preferably 80/20 for flavor)

  • 1/2 cup breadcrumbs

  • 1/4 cup milk

  • 1 small onion, finely chopped

  • 1 large egg

  • 1 tsp Worcestershire sauce

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and black pepper, to taste

  • 2 tbsp vegetable oil (for frying)

For the Mushroom Gravy:

  • 2 tbsp butter

  • 8 oz (225 g) mushrooms, sliced

  • 1 small onion, thinly sliced

  • 2 tbsp all-purpose flour

  • 2 cups beef broth

  • 1 tsp Worcestershire sauce

  • Salt and black pepper, to taste

  • Optional: 1/4 tsp dried thyme or a splash of cream for richness

Instructions

1. Make the Salisbury Steaks:

  1. In a large bowl, combine breadcrumbs and milk. Let sit 5 minutes to soak.

  2. Add ground beef, chopped onion, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until combined. Avoid overmixing—it keeps the patties tender.

  3. Shape mixture into 4 oval patties, about ¾-inch thick.

2. Cook the Steaks:

  1. Heat 2 tbsp oil in a large skillet over medium-high heat.

  2. Brown the patties 3–4 minutes per side, until a nice crust forms. They don’t need to be fully cooked yet. Remove from skillet and set aside.

3. Make the Mushroom Gravy:

  1. In the same skillet, melt butter over medium heat.

  2. Add sliced mushrooms and onions; cook 5–7 minutes until softened and lightly browned.

  3. Sprinkle flour over mushrooms and stir well to coat; cook 1–2 minutes to remove the raw flour taste.

  4. Gradually whisk in beef broth until smooth. Add Worcestershire sauce, salt, pepper, and optional thyme.

  5. Bring gravy to a simmer and cook until thickened, about 3–5 minutes.

4. Combine:

  1. Return the browned patties to the skillet, nestling them into the gravy.

  2. Cover and simmer 10–15 minutes until patties are cooked through (internal temp ~160°F / 71°C).

  3. Taste gravy and adjust seasoning if needed.

5. Serve:

  • Spoon patties and mushroom gravy over mashed potatoes, rice, or egg noodles.

  • Optional garnish: fresh parsley for color.

💡 Tips for Success:

  • Don’t overmix the meat mixture—this keeps steaks tender.

  • Browning the patties adds flavor, even if you finish cooking in the gravy.

  • Mushrooms absorb flavor beautifully—don’t skip them!

If you want, I can also give a faster version that uses just one skillet and takes under 30 minutes while still being rich and flavorful.

Do you want me to do that?
