Fideo with Ground Beef and Potatoes

Here’s a delicious, comforting Fideo with Ground Beef and Potatoes 🍝🥔—a classic Spanish/Mexican-inspired one-pan pasta dish that’s rich, savory, and hearty.


Ingredients (Serves 4)

  • 7 oz (200 g) fideo pasta (or thin vermicelli broken into 2-inch pieces)
  • 1 lb (450 g) ground beef
  • 2 medium potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)
  • 2 cups beef or chicken broth
  • 1 tsp smoked paprika or chili powder
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • Optional garnish: chopped parsley or cilantro

Instructions

  1. Brown beef
    • Heat olive oil in a large skillet or sauté pan over medium heat.
    • Add ground beef, season with salt and pepper, and cook until browned. Remove excess fat if needed.
  2. Sauté aromatics
    • Add onion and garlic to the pan with beef. Cook 2–3 minutes until softened.
  3. Toast pasta
    • Add fideo to the pan and toast 1–2 minutes, stirring constantly, until lightly golden.
  4. Add liquids & potatoes
    • Stir in diced tomatoes, broth, smoked paprika, and potatoes.
    • Bring to a simmer, cover, and cook 12–15 minutes until pasta is tender and potatoes are cooked.
  5. Finish & serve
    • Taste and adjust seasoning.
    • Garnish with fresh parsley or cilantro. Serve warm.

Tips & Variations

  • Cheesy version: Sprinkle shredded cheese on top before serving
  • Spicy kick: Add a diced jalapeño with onions or ½ tsp cayenne
  • Vegetable boost: Add peas, corn, or bell peppers
  • One-pan cleanup: Use a large sauté pan with a lid to cook everything together

This dish is comforting, filling, and easy to make, perfect for weeknight dinners or meal prep.
