This is a no-bake, sugar-free, low-carb treat that’s rich, creamy, and super easy—perfect for keto or anyone cutting sugar.


Easy Keto Peanut Butter Fudge

Ingredients

  • 1 cup natural peanut butter (no sugar added)
  • ½ cup powdered erythritol or monk fruit sweetener
  • ¼ cup coconut oil (or butter for a firmer fudge)
  • 1 tsp vanilla extract
  • Pinch of salt (optional, enhances flavor)

Instructions

  1. Melt coconut oil gently (microwave or stovetop)
  2. Stir in peanut butter until smooth
  3. Mix in sweetener, vanilla, and salt
  4. Pour into a parchment-lined dish
  5. Freeze 30–45 minutes until firm
  6. Cut into small squares and enjoy

Storage

  • Keep in the fridge or freezer (softens at room temp)
  • Lasts up to 2 weeks refrigerated

Variations

  • Chocolate swirl: Add 2 tbsp sugar-free cocoa powder or melted keto chocolate
