Ingredients
Meat filling
- ½ lb (225 g) ground beef
- ½ small onion, finely chopped
- ½ cup frozen peas & carrots (or finely diced veggies)
- 1 tbsp tomato paste
- ½ tsp Worcestershire sauce
- Salt & pepper to taste
- 1–2 tbsp oil
Mashed potato topping
- 2 cups mashed potatoes (leftover works great)
- 1 tbsp butter (optional)
- 2–3 tbsp milk (if needed)
- Optional: grated cheese for topping
Instructions
- Cook the filling
Heat oil in a pan, sauté onion until soft.
Add ground beef, cook until browned.
Stir in tomato paste, Worcestershire sauce, veggies, salt, and pepper.
Cook 2–3 minutes, then let cool slightly. - Prep the potatoes
Mash potatoes with butter and milk until smooth (not runny). - Assemble
Grease a mini muffin tin.
Spoon meat mixture into each cup (about ⅔ full).
Pipe or spoon mashed potatoes on top.
Sprinkle cheese if using. - Bake
Bake at 375°F (190°C) for 20–25 minutes, until golden on top. - Cool & serve
Let sit 5 minutes, then gently remove.
