Peach Cobbler Donut Hand Pies

Ingredients

For the dough (shortcut using biscuits or donut dough)

  • 1 can of refrigerated biscuit dough (or use donut dough if preferred)
  • 1 egg, beaten (for egg wash)

For the filling

  • 2 cups fresh or canned peaches, diced
  • 1/4 cup sugar (adjust to sweetness of peaches)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg (optional)
  • 1 tsp cornstarch (for thickening if using fresh peaches)

For the topping

  • 2 tbsp melted butter
  • 1/4 cup sugar
  • 1 tsp cinnamon

Instructions

  1. Prepare the filling
    • In a small saucepan, combine peaches, sugar, cinnamon, nutmeg, and cornstarch.
    • Cook over medium heat 3–5 minutes until slightly thickened. Let cool.
  2. Prepare the dough
    • Preheat oven to 375°F (190°C).
    • Roll out each biscuit or piece of dough into a small circle (about 4 inches).
  3. Assemble hand pies
    • Spoon 1–2 tablespoons of peach filling in the center of each circle.
    • Fold dough over to make a half-moon shape.
    • Press edges with a fork to seal.
    • Brush with beaten egg.
  4. Bake
    • Place hand pies on a parchment-lined baking sheet.
    • Bake 12–15 minutes until golden brown.
  5. Finish
    • Brush warm pies with melted butter.
    • Mix sugar and cinnamon and sprinkle over the top.

Tips

  • For a crispy, fried version, you can deep-fry the hand pies instead of baking.
  • Add a drizzle of glaze (powdered sugar + milk) for extra sweetness.
  • Mini versions are great for party snacks or lunchbox treats.
