🥔 Baked Potato with Sausage and Onions

Ingredients (serves 2–4)

  • 4 medium baking potatoes
  • 2–3 sausages (any type you like: bratwurst, smoked, or breakfast), sliced
  • 1 medium onion, thinly sliced
  • 2 tbsp olive oil or butter
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped parsley

Instructions

  1. Bake the potatoes
    • Preheat oven to 400°F (200°C).
    • Scrub potatoes, prick with a fork, and rub with a little olive oil and salt.
    • Bake directly on oven rack for 45–60 minutes, until tender inside.
  2. Cook sausage and onions
    • While potatoes bake, heat oil or butter in a skillet over medium heat.
    • Sauté onions until soft and golden.
    • Add sausage slices and cook until browned and fully cooked.
    • Season with salt and pepper.
  3. Assemble
    • Slice baked potatoes open lengthwise and fluff the insides with a fork.
    • Top each potato with sausage and onion mixture.
    • Add optional toppings like cheese, sour cream, or parsley.
  4. Serve
    • Serve hot as a main dish or side dish.

Tips

  • For extra flavor, sprinkle smoked paprika or garlic powder on the onions while cooking.
  • Sweet onions or red onions add a nice caramelized sweetness.
  • For a complete meal, serve with a side salad or steamed veggies.
