🥘 Sausage and Potato Casserole

Ingredients (serves 4–6)

  • 1 lb (450 g) sausages (smoked, bratwurst, or breakfast sausage), sliced
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 cup milk or cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven
    • Preheat to 375°F (190°C).
    • Grease a 9×13-inch baking dish.
  2. Cook potatoes
    • Boil diced potatoes in salted water 8–10 minutes until just tender.
    • Drain and set aside.
  3. Cook sausages
    • In a skillet, sauté sliced sausages until lightly browned.
    • Remove and set aside.
  4. Make creamy sauce
    • In the same skillet, melt butter over medium heat.
    • Stir in flour and cook 1–2 minutes.
    • Gradually whisk in milk/cream until smooth and thickened.
    • Season with paprika, salt, and pepper.
  5. Assemble casserole
    • In a baking dish, layer potatoes, sausage, onion, and garlic.
    • Pour creamy sauce over the top.
    • Sprinkle cheese evenly over the casserole.
  6. Bake
    • Bake 25–30 minutes, until bubbly and golden on top.
  7. Serve
    • Garnish with parsley if desired.
    • Serve warm as a main dish.

Tips

  • Add bell peppers, mushrooms, or spinach for extra veggies.
  • Use smoked sausage for a richer flavor.
  • Leftovers reheat well in the oven or microwave.
