Here’s a simple and hearty Green Bean Stew—a comforting veggie dish that’s full of flavor 🥘💚


🥬 Green Bean Stew

Ingredients (serves 4–6)

  • 1 lb (450 g) fresh or frozen green beans, trimmed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, chopped (or 1 can diced tomatoes, 14 oz)
  • 2 tbsp olive oil
  • 1 tsp paprika (smoked or sweet)
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp sugar (optional, balances acidity)
  • 1 1/2 cups vegetable or chicken broth
  • Optional: 1–2 potatoes, diced for heartier stew

Instructions

  1. Sauté aromatics
    • Heat olive oil in a pot over medium heat.
    • Sauté onion until translucent.
    • Add garlic and cook 30 seconds until fragrant.
  2. Add vegetables
    • Stir in green beans and tomatoes (and potatoes if using).
    • Add paprika, salt, pepper, and sugar. Stir to combine.
  3. Simmer
    • Pour in broth.
    • Cover and simmer 20–25 minutes, stirring occasionally, until green beans (and potatoes) are tender.
  4. Adjust seasoning & serve
    • Taste and adjust salt or pepper.
    • Serve hot with crusty bread or over rice.

Tips

  • For a richer stew, add 1–2 tbsp tomato paste with the spices.
  • You can add cooked meat (like sausage or chicken) for a heartier version.
  • Fresh green beans give the best texture, but frozen works well too.
