Here’s a comforting, take-out–style Slow Cooker Pepper Steak—tender beef, peppers, and a savory sauce, all with minimal prep 🥩🫑


🥩 Slow Cooker Pepper Steak

Ingredients (serves 4–6)

  • 1½–2 lb beef sirloin or flank steak, sliced thin
  • 1 large onion, sliced
  • 2–3 bell peppers (any colors), sliced
  • 3 cloves garlic, minced

Sauce

  • ¾ cup beef broth
  • ¼ cup soy sauce (low-sodium if possible)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp ginger powder (or fresh grated ginger)
  • ½ tsp black pepper

Thickener

  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. Prep slow cooker
    • Lightly grease the slow cooker insert.
  2. Layer ingredients
    • Add beef, onion, bell peppers, and garlic to the slow cooker.
  3. Add sauce
    • Whisk together broth, soy sauce, Worcestershire, brown sugar, ginger, and black pepper.
    • Pour over beef and vegetables.
  4. Cook
    • Cover and cook
      • LOW: 6–7 hours
      • HIGH: 3–4 hours
    • Beef should be tender.
  5. Thicken sauce
    • Mix cornstarch and water.
    • Stir into slow cooker during the last 20–30 minutes.
    • Cover and let sauce thicken.
  6. Serve
    • Serve over rice, noodles, or cauliflower rice.

Tips

  • Slice beef against the grain for tenderness.
  • Add mushrooms for extra flavor.
  • If you like heat, add red pepper flakes or a splash of hot sauce.
