Southern smothered beef & potato casserole

Here’s a Southern-style Smothered Beef & Potato Casserole—hearty, comforting, and full of rich onion gravy flavor. This is the kind of dish that’s perfect for family dinners.


🥘 Southern Smothered Beef & Potato Casserole

Ingredients

  • 1½ lbs beef (chuck steak, sirloin, or stew meat, thinly sliced)
  • 2 lbs potatoes, thinly sliced
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 packet onion soup mix (or 2 tbsp homemade)
  • 1 tsp seasoned salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp thyme (optional)
  • 2 tbsp vegetable oil or butter

Optional Topping

  • 1–1½ cups shredded cheddar cheese

Instructions

1️⃣ Season & Brown Beef

  1. Heat oil in a skillet over medium-high heat.
  2. Season beef with seasoned salt, pepper, paprika, and thyme.
  3. Brown beef quickly (2–3 minutes per side). Remove and set aside.

2️⃣ Smothered Onions

  1. In the same pan, add onions and cook until soft and lightly caramelized.
  2. Add garlic and cook 30 seconds.

3️⃣ Assemble Casserole

  1. Grease a 9×13-inch baking dish.
  2. Layer half the potatoes, half the beef, and half the onions.
  3. Repeat layers.
  4. Whisk beef broth with onion soup mix and pour evenly over the casserole.

4️⃣ Bake

  1. Cover tightly with foil.
  2. Bake at 350°F (175°C) for 1 hour.
  3. Uncover and bake 15–20 minutes more.
  4. Add cheese in the last 10 minutes if using.

5️⃣ Serve

Let rest 10 minutes before serving.
Great with green beans, cornbread, or biscuits.


⭐ Southern Tips & Variations

  • Extra gravy: Add 1 tbsp cornstarch mixed with broth.
  • Slow cooker option: Cook LOW 6–7 hours.
  • Creamy version: Add ½ cup cream of mushroom soup.
  • More veggies: Add bell peppers or mushrooms.
