Hamburger Vegetable Soup

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 cup green beans (fresh or frozen)
  • 1 cup corn (fresh or frozen)
  • 1 cup peas (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 6–7 cups beef broth
  • 1 tbsp tomato paste (optional, for richness)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning or thyme
  • 1 bay leaf

Instructions

  1. Brown the beef
    • In a large pot over medium heat, brown ground beef with onion.
    • Drain excess grease if needed.
    • Add garlic and cook 30 seconds.
  2. Build the soup
    • Stir in tomato paste (if using).
    • Add carrots, celery, potatoes, green beans, corn, peas, diced tomatoes, broth, bay leaf, salt, pepper, paprika, and seasoning.
  3. Simmer
    • Bring to a boil, then reduce to a simmer.
    • Cover and cook 30–40 minutes, until vegetables are tender.
  4. Finish
    • Remove bay leaf.
    • Taste and adjust seasoning.

Tips & Variations

  • Thicker soup: mash some potatoes in the pot.
  • More flavor: add Worcestershire sauce or a splash of soy sauce.
  • Low-carb: skip potatoes and add more green veggies.
  • Slow cooker: brown beef first, then cook on LOW 6–8 hours.
