Ingredients

For the filling:

  • 1 cup cooked chicken, finely chopped (you can use rotisserie or boiled chicken)

For the wrappers:

  • 20-25 dumpling wrappers (store-bought or homemade)

For frying:

  • 2-3 tbsp vegetable oil
  • 1/4 cup water (for steaming in the pan)

Optional dipping sauce:

  • 2 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1/2 tsp chili oil or sesame seeds

Instructions

  1. Make the filling:
    • In a bowl, combine the chicken, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well.
  2. Fill the dumplings:
    • Place a dumpling wrapper on your hand.
    • Add about 1 tsp of filling in the center.
    • Wet the edges of the wrapper with a little water.
    • Fold and pinch the edges to seal (you can fold into a half-moon shape or pleat the edges for a traditional look).
  3. Fry the dumplings:
    • Heat 2 tbsp oil in a non-stick skillet over medium heat.
    • Place dumplings in the skillet, flat side down. Fry for 2-3 minutes until the bottoms are golden brown.
    • Carefully add 1/4 cup water to the pan (watch for splatter!) and cover immediately. Let the dumplings steam for 4-5 minutes, or until the water evaporates and the dumplings are cooked through.
    • Remove the lid and let the bottoms crisp up again for 1-2 minutes.
  4. Serve:
    • Serve hot with your dipping sauce.
