Here’s a simple, classic beef tips and gravy recipe—comfort food that’s easy to make and great over rice, mashed potatoes, or egg noodles.

Beef Tips and Gravy

Ingredients

  • 1½–2 lb beef sirloin or stew meat, cut into bite-size pieces
  • Salt and black pepper
  • 2 tbsp oil or butter
  • 1 small onion, chopped (optional but recommended)
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp soy sauce (optional, adds depth)
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 2 tbsp cornstarch + 2 tbsp cold water (for thickening)

Instructions (Stovetop)

  1. Season beef with salt and pepper.
  2. Brown the beef in a large skillet or pot over medium-high heat with oil. Do this in batches so it browns, not steams. Remove beef and set aside.
  3. Sauté onion in the same pan until soft (about 3–4 minutes). Add garlic and cook 30 seconds.
  4. Add broth and seasonings, scraping up browned bits from the pan.
  5. Return beef to pan, reduce heat to low, cover, and simmer 30–45 minutes until tender.
  6. Thicken gravy: Stir cornstarch slurry into the pan and simmer 2–3 minutes until thick.
  7. Taste and adjust seasoning.

Slow Cooker Option

  • Brown beef first, then add everything except cornstarch to the slow cooker.
  • Cook LOW 6–8 hours or HIGH 3–4 hours.
  • Stir in cornstarch slurry at the end and cook 15 minutes more.

Serving Ideas

  • Over mashed potatoes 🥔
  • With rice
  • Over egg noodles
  • Add a side of green beans or peas
