Shepherd’s pie and crumbcake

Here’s a guide for making Shepherd’s Pie and a simple Crumb Cake—two classic comfort foods:


1. Shepherd’s Pie

Ingredients (serves 4)

For the filling:

  • 500 g (1 lb) ground lamb or beef
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas or mixed vegetables
  • 2 tbsp tomato paste
  • 1 cup beef or vegetable broth
  • 1 tsp Worcestershire sauce (optional)
  • Salt and pepper, to taste
  • 1–2 tsp oil for cooking

For the topping:

  • 4 cups mashed potatoes (prepared with butter and milk)
  • 1/4 cup grated cheese (optional)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cook the filling:
    • Heat oil in a skillet, sauté onion, carrots, and garlic until softened.
    • Add ground meat, cook until browned.
    • Stir in tomato paste, Worcestershire sauce, salt, pepper, and broth. Simmer 5–10 minutes.
    • Add peas or other vegetables, cook 2–3 minutes.
  3. Assemble:
    • Transfer filling to a baking dish. Spread mashed potatoes evenly on top.
    • Sprinkle cheese over the potatoes if using.
  4. Bake:
    • Bake 20–25 minutes until the top is golden and slightly crispy.

  • You can make the mashed potatoes lighter by using milk or yogurt.
  • Leftover Shepherd’s Pie reheats well in the oven or microwave.

2. Crumb Cake

Ingredients

For the cake:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk or yogurt

For the crumb topping:

  • 1/2 cup flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup butter, cold and cut into small pieces
  • 1 tsp cinnamon (optional)

Instructions

  1. Preheat oven to 175°C (350°F) and grease a 9×9-inch pan.
  2. Make the crumb topping:
    • Mix flour, sugar, brown sugar, and cinnamon.
    • Cut in cold butter until mixture resembles coarse crumbs. Set aside.
  3. Make the cake:
    • Beat butter and sugar until fluffy.
    • Add eggs and vanilla, mix well.
    • Gradually mix in flour, baking powder, baking soda, salt, and milk/yogurt until smooth.
  4. Assemble:
    • Pour batter into the prepared pan.
    • Sprinkle crumb topping evenly over the batter.
  5. Bake:
    • Bake 35–40 minutes until a toothpick comes out clean.
    • Cool before slicing and serving.

  • You can add fruit like blueberries or chopped apples to the cake batter for extra flavor.
  • Crumb cake keeps well for 2–3 days in an airtight container.
