Cajun Chicken Bites over Cheesy Alfredo Linguine

Serves 4

Cajun Chicken Bites

  • 1½ lb boneless, skinless chicken breast, cut into bite-size pieces
  • 1½ tbsp Cajun seasoning (adjust to taste)
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • 2 tbsp olive oil
  • 1 tbsp butter

Cheesy Alfredo Linguine

  • 12 oz linguine pasta
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ cup shredded mozzarella (optional, extra cheesy)
  • Salt & black pepper, to taste
  • Optional: chopped parsley for garnish

Instructions

1. Cook the pasta

  • Bring a large pot of salted water to a boil.
  • Cook linguine until al dente. Reserve ½ cup pasta water, then drain.

2. Make Cajun chicken bites

  • Toss chicken with Cajun seasoning, garlic powder, and smoked paprika.
  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Add chicken in a single layer and cook 4–5 minutes per side until golden and cooked through. Remove and set aside.

3. Prepare the Alfredo sauce

  • In the same skillet, melt butter over medium heat.
  • Add garlic and sauté 30 seconds until fragrant.
  • Pour in heavy cream and simmer gently for 3–4 minutes.
  • Stir in Parmesan and mozzarella until melted and smooth. Season with salt and pepper.

4. Combine

  • Add cooked linguine to the sauce, tossing to coat. Add reserved pasta water if needed for looseness.
  • Top with Cajun chicken bites or gently fold them in.

5. Serve

  • Garnish with parsley and extra Parmesan. Serve hot.

  • Add shrimp or andouille sausage for a Cajun twist
  • Toss in spinach or sun-dried tomatoes for color
  • Use half-and-half instead of cream for a lighter version
  • Control heat by adjusting Cajun seasoning
