Crinkle Cake

Here’s the viral, buttery, custardy Crinkle Cake (also called Grecian Crinkle Cake)—crispy on top, soft in the middle, and soaked in vanilla custard 🍰✨


Crinkle Cake

Serves 6–8

Ingredients

For the cake:

  • 1 package phyllo dough, thawed
  • 1 cup (2 sticks) unsalted butter, melted

For the custard:

  • 2 large eggs
  • 1 cup milk
  • ½ cup heavy cream
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • ½ tsp salt

Optional toppings:

  • Powdered sugar
  • Honey drizzle
  • Crushed pistachios or almonds

Instructions

  1. Preheat oven
    350°F (175°C). Butter a 9×13-inch baking dish.
  2. Crinkle the phyllo
    Take one sheet of phyllo, scrunch it loosely like an accordion, and place it into the dish. Repeat, lining them up until the dish is full.
  3. Bake dry
    Bake the phyllo uncovered for 10–12 minutes to dry it out slightly.
  4. Add butter
    Remove from oven and evenly pour melted butter over the phyllo. Bake again for 10–15 minutes until golden and crisp.
  5. Make the custard
    Whisk eggs, milk, cream, sugar, vanilla, and salt until smooth.
  6. Pour custard
    Slowly pour custard over the hot phyllo so it soaks in evenly.
  7. Final bake
    Return to oven and bake 30–35 minutes until set and lightly golden.
  8. Cool & serve
    Let cool 15–20 minutes before slicing.

💡 Tips for Perfect Crinkle Cake

  • Use room-temperature custard for even soaking
  • Don’t pack phyllo too tightly—air gaps make it crisp
  • Best served warm or at room temperature

  • Cinnamon sugar: Add 1 tsp cinnamon to custard
  • Lemon: Add lemon zest to custard
  • Nutella drizzle: After baking
  • Savory version: Skip sugar, add cheese & herbs
