Ingredients (Serves 2–4)

  • 2–4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 2–3 cloves garlic, minced
  • 2 tbsp butter
  • ¼ cup shredded cheese (mozzarella, cheddar, or Parmesan)
  • 2 tbsp cream cheese (optional, for extra creaminess)
  • 1 tsp fresh thyme or parsley (optional)
  • Salt & pepper, to taste
  • 1–2 tbsp olive oil

Instructions

  1. Prepare the chicken
    • Preheat oven to 375°F (190°C).
    • Slice a pocket into the side of each chicken breast without cutting all the way through.
  2. Make the mushroom filling
    • In a skillet, melt butter over medium heat.
    • Sauté garlic and mushrooms until soft and most moisture evaporates (~5–7 minutes).
    • Stir in cheese, cream cheese, herbs, salt, and pepper. Remove from heat.
  3. Stuff the chicken
    • Spoon the mushroom mixture into each chicken breast pocket.
    • Secure with toothpicks if needed.
  4. Cook the chicken
    • Heat olive oil in an oven-safe skillet over medium-high heat.
    • Sear chicken 2–3 minutes per side until golden.
    • Transfer skillet to the oven and bake 15–20 minutes until chicken reaches an internal temperature of 165°F (74°C).
  5. Serve
    • Remove toothpicks, slice, and spoon any pan juices over the chicken.
    • Pair with mashed potatoes, rice, or steamed veggies.

  • Extra garlic flavor: Brush melted garlic butter over the chicken before baking.
  • Crispier finish: Broil 1–2 minutes at the end.
