Stuffed Chicken Breast with Mushroom & Ham
Ingredients (serves 2–4)
- 2–4 chicken breasts (boneless, skinless)
- 1 cup mushrooms, finely chopped
- ½ cup cooked ham, diced or chopped
- ½ cup shredded cheese (mozzarella, Swiss, or cheddar)
- 1 small onion or shallot, finely chopped (optional)
- 1–2 cloves garlic, minced
- Salt and pepper, to taste
- 1 tsp dried thyme or Italian seasoning
- 1–2 tbsp olive oil or butter
- Toothpicks or kitchen twine
Instructions
- Prepare the filling
- Heat 1 tbsp oil or butter in a pan over medium heat.
- Add onions (if using) and cook until soft.
- Add mushrooms and cook until their moisture evaporates.
- Stir in garlic, ham, salt, pepper, and herbs.
- Remove from heat and mix in the cheese. Let cool slightly.
- Prepare the chicken
- Carefully slice a pocket into each chicken breast (don’t cut all the way through).
- Season the inside and outside with salt and pepper.
- Stuff the chicken
- Spoon the mushroom–ham mixture into each pocket.
- Secure with toothpicks or tie with kitchen twine.
- Cook
- Heat a pan with a little oil over medium heat.
- Sear the chicken for 3–4 minutes per side until golden.
- Lower heat, cover, and cook another 8–12 minutes until fully cooked
(or transfer to a 180°C / 350°F oven for 15–20 minutes).
- Rest & serve
- Let the chicken rest for 5 minutes.
- Remove toothpicks and serve.
