Cheesy Sausage Breakfast Casserole

Ingredients

  • 1 lb (450 g) breakfast sausage (pork or turkey)
  • 6 large eggs
  • 1½ cups milk (whole or 2%)
  • 2 cups shredded cheese (cheddar, Colby-Jack, or a mix)
  • 3 cups frozen hash browns (or diced cooked potatoes)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • ¼ tsp garlic powder (optional)
  • 2 tbsp butter or oil (for greasing dish)

Optional add-ins

  • ½ cup diced onion
  • ½ cup bell pepper
  • ¼ cup chopped green onions

Instructions

  1. Preheat oven to 190°C / 375°F. Grease a 9×13-inch baking dish.
  2. Cook sausage in a skillet over medium heat until browned. Drain excess fat.
  3. Layer the casserole
    • Spread hash browns evenly in the dish
    • Top with cooked sausage
    • Sprinkle cheese over the top
  4. Mix eggs
    • Whisk eggs, milk, salt, pepper, and spices.
  5. Pour egg mixture evenly over the casserole.
  6. Bake uncovered for 40–45 minutes, until eggs are set and top is lightly golden.
  7. Rest 5–10 minutes before slicing.
