🍠 Sweet Potato Rocambole with Minced Meat

Ingredients (serves 4–6)

For the sweet potato layer:

  • 2 large sweet potatoes, peeled and boiled
  • 1–2 tablespoons butter
  • Salt and pepper, to taste
  • Optional: 1 teaspoon paprika or nutmeg

For the minced meat filling:

  • 1 lb (450 g) ground beef, pork, or a mix
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup bell pepper, finely diced (optional)
  • 1 teaspoon paprika or chili powder
  • 1 teaspoon dried oregano or thyme
  • Salt and pepper, to taste
  • 1 tablespoon oil for cooking

For assembly:

  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 egg (optional, for brushing or binding)

Instructions

  1. Prepare sweet potato layer
    • Boil sweet potatoes until soft.
    • Mash with butter, salt, pepper, and optional spices until smooth.
    • Spread mashed sweet potato evenly on a sheet of parchment paper into a rectangle (~1/2 inch thick). Let cool slightly.
  2. Cook minced meat filling
    • Heat oil in a skillet over medium heat.
    • Sauté onion, garlic, and bell pepper until soft.
    • Add minced meat, paprika, oregano, salt, and pepper. Cook until browned and fully cooked.
    • Let the mixture cool slightly.
  3. Assemble the rocambole
    • Spread the cooked meat evenly over the sweet potato layer.
    • Sprinkle shredded cheese on top.
    • Using the parchment paper, carefully roll the sweet potato sheet into a roulade. Seal the ends.
  4. Bake
    • Preheat oven to 375°F (190°C).
    • Place the roulade seam-side down on a baking sheet lined with parchment.
    • Optional: brush with a beaten egg for a golden crust.
    • Bake 20–25 minutes until heated through and lightly golden.
  5. Serve
    • Slice into rounds and serve with a side salad or roasted vegetables.

💡 Tips

  • For extra flavor, add herbs like rosemary or sage to the sweet potato mash.
  • Can be made vegetarian by substituting minced meat with sautéed mushrooms, lentils, or textured vegetable protein.
  • Refrigerate leftovers and reheat slices individually—they hold their shape well.
