Here’s a cozy, filling Cheesy Sausage and Rice recipe—simple, one-pan, and great for busy nights.


🧀 Cheesy Sausage and Rice

Ingredients (serves 4–6)

  • 1 lb smoked sausage or kielbasa, sliced
  • 1 tablespoon olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup milk (or cream for extra richness)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme or Italian seasoning
  • Salt and pepper to taste
  • 1 1/2–2 cups shredded cheese (cheddar, Colby-Jack, or mozzarella)
  • Optional: 1 cup peas or broccoli florets

Instructions

  1. Brown the sausage
    Heat oil in a large skillet or deep pan over medium heat. Add sausage and cook until lightly browned. Remove and set aside.
  2. Sauté aromatics
    In the same pan, add onion and cook 3–4 minutes until soft. Add garlic and cook 30 seconds.
  3. Add rice & liquid
    Stir in rice, paprika, thyme, salt, and pepper. Pour in chicken broth and milk. Bring to a gentle simmer.
  4. Cook the rice
    Cover, reduce heat to low, and cook 15–18 minutes, until rice is tender and liquid is absorbed.
  5. Finish with cheese
    Stir sausage back in along with vegetables (if using). Sprinkle cheese over the top, cover, and cook 2–3 minutes until melted.
  6. Serve
    Stir gently and serve hot.

💡 Tips & Variations

  • Use spicy sausage for extra kick 🌶️
  • Swap rice for brown rice (add extra liquid + time)
  • Add a dash of hot sauce or Dijon mustard for depth
  • Turn it into a baked version by finishing in the oven at 375°F for 10 minutes
