Here’s a hearty and comforting recipe for a Cheesy Sausage and Potato Bake—perfect for a family meal or leftovers that reheat well.


Ingredients

  • 4–5 medium potatoes, peeled and thinly sliced
  • 6–8 sausages (pork, chicken, or your choice), sliced or left whole
  • 1 onion, thinly sliced
  • 2 cups shredded cheese (cheddar works best)
  • 1 cup milk (or cream for a richer dish)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp mustard (optional, for flavor)
  • Salt and pepper to taste
  • 1 tsp dried herbs (thyme or rosemary work well)

Instructions

1. Preheat oven:

  • Preheat your oven to 180°C (350°F).

2. Prepare the sauce:

  • In a small saucepan, melt butter over medium heat.
  • Stir in flour and cook for 1–2 minutes to make a roux.
  • Gradually whisk in milk until smooth and thickened.
  • Stir in 1 1/2 cups of the cheese until melted.
  • Season with salt, pepper, and mustard/herbs if using.

3. Assemble the bake:

  • In a greased baking dish, layer half of the sliced potatoes.
  • Add the sausages and onion on top.
  • Pour half of the cheese sauce over this layer.
  • Repeat with the remaining potatoes and sauce.

4. Top with cheese:

  • Sprinkle the remaining 1/2 cup of cheese evenly over the top.

5. Bake:

  • Cover with foil and bake for 40 minutes.
  • Remove foil and bake for another 15–20 minutes, until the top is golden and the potatoes are tender.

6. Serve:

  • Let it sit for 5 minutes before slicing. Serve warm with a simple salad or steamed veggies.
