Berry Cake

Ingredients (8–10 servings)

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain yogurt
  • 1–1½ cups mixed berries (fresh or frozen; blueberries, raspberries, strawberries)
  • Optional: powdered sugar or glaze for topping

Instructions

  1. Preheat oven
    • 350°F (175°C). Grease and flour an 8-inch round or 9×9-inch baking pan.
  2. Mix dry ingredients
    • In a medium bowl, whisk flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar
    • In a large bowl, beat butter and sugar until light and fluffy.
    • Add eggs one at a time, then stir in vanilla.
  4. Combine wet and dry
    • Mix in sour cream or yogurt.
    • Gradually fold in dry ingredients until just combined.
  5. Add berries
    • Gently fold berries into the batter to avoid crushing.
  6. Bake
    • Pour batter into prepared pan.
    • Bake 35–45 minutes (round pan) or 40–50 minutes (square pan) until a toothpick inserted in the center comes out clean.
  7. Cool and serve
    • Let cool 10–15 minutes in pan, then transfer to a wire rack.
    • Optional: dust with powdered sugar or drizzle with glaze.

Tips & Variations

  • Frozen berries: Toss in 1 tbsp flour to prevent sinking.
  • Lemon flavor: Add 1 tsp lemon zest to the batter for a bright, fresh taste.
  • Extra moist: Replace ¼ cup butter with ¼ cup vegetable oil.
  • Layer cake: Double the recipe for a 2-layer cake with cream cheese frosting.
