Sausage Meat Stuffing Balls

Ingredients (makes about 20–24 balls)

  • 1 lb breakfast sausage (mild or spicy)
  • 4 cups bread cubes (day-old bread works best)
  • ½ cup onion, finely chopped
  • ½ cup celery, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup chicken or turkey broth
  • 2 tbsp butter, melted
  • Optional: 1 egg, beaten (for binding)

Instructions

  1. Preheat oven
    • 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cook sausage and veggies
    • In a skillet, cook sausage over medium heat until browned.
    • Add onion, celery, and garlic; sauté 3–4 minutes until softened. Remove from heat.
  3. Combine stuffing
    • In a large bowl, combine bread cubes, cooked sausage mixture, sage, thyme, salt, and pepper.
    • Pour in broth and melted butter; stir until evenly moistened.
    • Optional: stir in beaten egg for firmer balls.
  4. Form balls
    • Shape mixture into 1½-inch balls and place on prepared baking sheet.
  5. Bake
    • Bake 20–25 minutes, until golden brown and cooked through.
  6. Serve
    • Serve warm as a side dish, appetizer, or holiday favorite.

Tips & Variations

  • Cheesy stuffing balls: Add ½ cup shredded cheddar or Parmesan.
  • Herb twist: Mix in rosemary, parsley, or poultry seasoning.
  • Cranberry sausage balls: Add ¼ cup dried cranberries for a sweet-savory flavor.
  • Make ahead: Assemble and refrigerate for a few hours or overnight before baking.
