Puff Pastry Sausage Rolls

Ingredients (makes 8–10 rolls)

  • 1 sheet puff pastry, thawed
  • 8 oz sausage (any flavor, removed from casing if using links)
  • 1 small onion, finely chopped (optional)
  • 1 tsp dried herbs (thyme, sage, or parsley)
  • 1 egg, beaten (for egg wash)
  • Optional: mustard or cheese for extra flavor

Instructions

  1. Preheat oven
    • 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare filling
    • In a bowl, mix sausage, chopped onion, and herbs.
    • Optional: add 2–3 tbsp shredded cheese or a teaspoon of mustard.
  3. Prepare pastry
    • Roll puff pastry sheet into a rectangle.
    • Cut into 2–3 strips lengthwise, depending on desired size of rolls.
  4. Assemble rolls
    • Place sausage mixture along the center of each strip.
    • Fold pastry over filling and press edges to seal.
    • Cut into smaller rolls if desired.
    • Brush tops with beaten egg.
  5. Bake
    • Bake 20–25 minutes, until pastry is golden and puffed, and sausage is cooked through.
  6. Serve
    • Let cool slightly and serve warm. Great with ketchup, mustard, or dipping sauce.
