Sizzling Garlic Chicken Stir-Fry with Peppers & Steamed Rice

Ingredients (4 servings)

For the Chicken Stir-Fry

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2–3 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional for extra flavor)
  • 1 tsp sesame oil
  • ½ tsp crushed red pepper flakes (optional, for heat)

For Serving

  • 2 cups cooked steamed rice (white, jasmine, or brown)

Instructions

  1. Prepare ingredients
    • Slice chicken and vegetables into thin strips.
    • Cook rice according to package instructions.
  2. Cook chicken
    • Heat vegetable oil in a large skillet or wok over medium-high heat.
    • Add chicken and stir-fry until golden and cooked through (5–7 minutes). Remove and set aside.
  3. Stir-fry vegetables
    • In the same skillet, add garlic and onions; sauté 1–2 minutes until fragrant.
    • Add bell peppers and stir-fry 3–4 minutes until crisp-tender.
  4. Combine & sauce
    • Return chicken to skillet.
    • Add soy sauce, oyster sauce, sesame oil, and red pepper flakes.
    • Toss everything together for 1–2 minutes until evenly coated and sizzling.
  5. Finish & serve
    • Sprinkle chopped green onions on top.
    • Serve immediately over steamed rice.

Tips & Variations

  • Extra vegetables: Add broccoli, snow peas, or carrots for more color and nutrition.
  • Spicy version: Increase red pepper flakes or add sriracha.
  • Marinated chicken: Marinate in 1 tbsp soy sauce + 1 tsp cornstarch for 15 minutes for extra tenderness.
  • Gluten-free: Use tamari instead of soy sauce.

If you want, I can also give a 30-minute one-pan version where the rice cooks in the same pan as the stir-fry for even faster cleanup.
