No-Bake Funfetti Oreo Icebox Cake

Ingredients (9×13-inch dish)

  • 1 package (14–15 oz) Golden Oreos
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream, cold
  • ½ cup rainbow sprinkles (jimmies work best)
  • Optional: white chocolate chips or crushed Oreos for topping

Instructions

  1. Make the cream layer
    • Beat cream cheese until smooth.
    • Add powdered sugar and vanilla; mix well.
    • In a separate bowl, whip heavy cream to stiff peaks.
    • Gently fold whipped cream into cream cheese mixture.
    • Fold in sprinkles.
  2. Assemble the cake
    • Spread a thin layer of cream on the bottom of the dish.
    • Add a layer of Golden Oreos (whole or slightly overlapping).
    • Spread cream evenly over Oreos.
    • Repeat layers until finished, ending with cream on top.
  3. Decorate
    • Top with extra sprinkles, crushed Oreos, or white chocolate chips.
  4. Chill
    • Cover and refrigerate at least 4–6 hours, preferably overnight, so cookies soften.
  5. Serve
    • Slice and serve cold.

Tips & Variations

  • Chocolate version: Use regular Oreos instead of Golden.
  • Extra funfetti: Add Funfetti cake mix crumbs (heat-treated) to the cream.
  • Individual servings: Assemble in cups or mason jars.
  • Make ahead: Keeps well refrigerated for up to 3 days.
