Here’s a decadent Midnight Fudge Cake—rich, chocolatey, and perfect for chocolate lovers 🍫✨


Midnight Fudge Cake

Ingredients (8–10 servings)

  • 1¾ cups all-purpose flour
  • 2 cups sugar
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk (or 1 cup milk + 1 tsp vinegar)
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot water or hot coffee

Optional Fudge Glaze

  • 4 oz semi-sweet chocolate, chopped
  • ¼ cup heavy cream
  • 2 tbsp butter

Instructions

  1. Preheat oven
    • 350°F (175°C) and grease a 9×13-inch baking pan or line with parchment paper.
  2. Mix dry ingredients
    • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine wet ingredients
    • In another bowl, mix buttermilk, oil, eggs, and vanilla.
  4. Make batter
    • Gradually add wet ingredients to dry, stirring until combined.
    • Slowly add hot water or coffee to the batter (batter will be thin, that’s normal).
  5. Bake
    • Pour batter into prepared pan.
    • Bake 35–40 minutes, or until a toothpick comes out with a few moist crumbs.
    • Cool completely.
  6. Optional fudge glaze
    • Heat cream until simmering. Pour over chocolate and butter in a bowl. Stir until smooth.
    • Pour over cooled cake and let set.

Tips & Variations

  • Extra fudgy: Use coffee instead of water to intensify chocolate flavor.
  • Chocolate chunks: Fold ½ cup chocolate chips into the batter before baking.
  • Layered cake: Slice in half and fill with chocolate ganache or fudge frosting.
  • Make it quicker: Bake in 8–9 inch round pans for slightly shorter baking time (~30 minutes).
