Lemon self saucing pudding

Here’s a classic Lemon Self-Saucing Pudding—warm, tangy, and perfect for dessert lovers 🍋🍮


Lemon Self-Saucing Pudding

Ingredients (4–6 servings)

Pudding

  • 1 cup (125 g) self-raising flour
  • ½ cup (100 g) sugar
  • 2 tbsp butter, melted
  • 1 egg
  • ½ cup (120 ml) milk
  • Zest of 1 lemon

Sauce

  • 1 cup (200 g) brown sugar
  • 1½ cups (360 ml) boiling water
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven
    • 350°F (175°C).
    • Grease a 1.5–2 liter (6–8 cup) baking dish.
  2. Make the pudding batter
    • In a bowl, mix flour, sugar, lemon zest.
    • Add melted butter, egg, and milk.
    • Stir until smooth and pour into prepared dish.
  3. Add the sauce
    • Sprinkle brown sugar evenly over the batter.
    • Pour boiling water gently over the top (do not stir).
  4. Bake
    • Bake 35–40 minutes, until the pudding is set and the top is lightly golden.
    • The sauce forms underneath as it bakes.
  5. Serve
    • Serve warm with cream, custard, or ice cream.

Tips & Variations

  • Extra tangy: Add 1–2 tsp lemon juice to the batter.
  • Lime version: Substitute lime for lemon.
  • Citrus glaze: Drizzle extra lemon juice mixed with a little sugar over the top before serving.
  • Make-ahead: Prepare batter and sauce separately; pour sauce over just before baking.
