Here’s a cheesy chicken recipe that’s creamy, flavorful, and simple enough for a weeknight dinner 🧀🍗


Cheesy Chicken Skillet

Servings: 4

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika (optional)
  • 2 tbsp olive oil
  • 1 cup shredded cheddar or mozzarella cheese
  • ½ cup cream cheese
  • ½ cup milk or chicken broth
  • 2 cloves garlic, minced
  • Optional: chopped parsley or green onions for garnish

Instructions

  1. Prepare the chicken
    • Season chicken breasts with salt, pepper, garlic powder, and paprika.
    • Heat olive oil in a large skillet over medium heat.
    • Cook chicken 5–6 minutes per side, until golden and cooked through. Remove and set aside.
  2. Make the cheesy sauce
    • In the same skillet, add garlic and sauté 30 seconds until fragrant.
    • Reduce heat to low, add cream cheese and milk/broth, stirring until smooth.
    • Stir in shredded cheese until melted and creamy.
  3. Combine
    • Return chicken to the skillet, spooning cheese sauce over the top.
    • Simmer 2–3 minutes so the flavors meld.
  4. Serve
    • Garnish with parsley or green onions.
    • Serve with rice, pasta, or roasted vegetables.

Tips & Variations

  • Add cooked spinach or mushrooms to the sauce for extra flavor.
  • Swap cheddar for pepper jack for a spicy twist.
  • Use baked chicken breasts instead of pan-frying for a lighter version.
