Here’s a fresh, sweet, and crunchy carrot salad with pineapple and walnuts—super easy to make and full of flavor:


Ingredients (serves 2–4)

  • 2 cups grated carrots (about 3–4 medium carrots)
  • 1 cup pineapple chunks (fresh or canned, drained if canned)
  • ½ cup chopped walnuts (toasted for extra flavor, optional)
  • 2–3 tablespoons mayonnaise or Greek yogurt (for a lighter version)
  • 1–2 teaspoons honey or maple syrup (optional, for extra sweetness)
  • 1 teaspoon lemon juice (to balance the sweetness)
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients:
    • Grate the carrots.
    • Chop the walnuts if needed. Toast them lightly in a dry pan for 2–3 minutes to bring out the flavor (optional).
  2. Combine the salad:
    In a large bowl, mix grated carrots, pineapple chunks, and walnuts.
  3. Make the dressing:
    In a small bowl, combine mayonnaise or Greek yogurt, honey, lemon juice, salt, and pepper. Adjust sweetness or tang to your taste.
  4. Mix everything:
    Pour the dressing over the carrot mixture and toss until evenly coated.
  5. Chill (optional):
