Got it! Here’s a simple, kid-friendly baked egg and cheese casserole you can make for breakfast or brunch. It’s easy, customizable, and perfect for feeding a group.


Ingredients (serves 4-6)

  • 6 large eggs
  • 1 cup milk (any kind)
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or a mix)
  • 4-5 slices of bread, cubed (or 2 cups of day-old bread)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder or onion powder (optional)
  • Optional add-ins: diced cooked bacon, sausage, ham, or veggies like bell peppers, spinach, or mushrooms

Instructions

  1. Preheat oven:
    Set oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. Prepare the egg mixture:
    In a bowl, whisk together eggs, milk, salt, pepper, and optional seasonings.
  3. Layer the casserole:
    Spread the bread cubes evenly in the baking dish. Sprinkle half of the shredded cheese (and any meat or veggies if using) over the bread. Pour the egg mixture on top. Then sprinkle the remaining cheese.
  4. Bake:
    Bake uncovered for 30-35 minutes, until the eggs are fully set and the top is golden brown.
  5. Serve:
    Let it cool for a few minutes before slicing. Great with ketchup, hot sauce, or fresh herbs on top!

This recipe is very flexible—you can add different cheeses, cooked meats, or vegetables to make it your own.
