Garlic Butter Steak and Potatoes Skillet

Servings: 2–3

Ingredients

  • 2–3 small steaks (ribeye, sirloin, or your choice), about 6–8 oz each
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1 lb small potatoes (Yukon gold or red), cut into 1-inch pieces
  • 1 tsp fresh thyme or rosemary (optional)
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Prep potatoes
    • Heat 1 tbsp olive oil in a large skillet over medium heat.
    • Add potatoes, season with salt and pepper, and cook 15–20 minutes, stirring occasionally, until golden and tender. Remove from skillet and set aside.
  2. Cook steaks
    • Season steaks with salt and pepper.
    • In the same skillet, heat remaining olive oil over medium-high heat.
    • Sear steaks 3–5 minutes per side, depending on thickness, until desired doneness. Remove from skillet and set aside.
  3. Make garlic butter
    • Reduce heat to medium. Add 3 tbsp butter and garlic to the skillet. Cook 30–60 seconds until fragrant.
    • Optional: add thyme or rosemary for extra flavor.
  4. Combine everything
    • Return cooked potatoes and steaks to the skillet.
    • Spoon garlic butter over everything and heat 1–2 minutes, letting flavors meld.
  5. Serve
    • Garnish with chopped parsley and serve immediately.

  • Steak doneness: Use a meat thermometer—130°F for medium-rare, 140°F for medium.
  • Crispy potatoes: Parboil potatoes 5 minutes before pan-frying for extra crispiness.
