  • ½ cup mayonnaise
  • 2 tbsp sriracha or hot sauce
  • 1 tsp lime juice
  • Optional: 1 tsp honey for balance

Instructions

  1. Prepare cowboy butter (if making)
    • Mix melted butter with parsley, garlic powder, paprika, and cayenne. Set aside.
  2. Cook steak
    • Heat a skillet over medium-high heat.
    • Season steak slices with salt and pepper.
    • Quickly sear 1–2 minutes per side until browned but not overcooked.

    • Fold tortillas over or leave open-faced depending on preference.
  5. Cook melts
    • Heat a large skillet or griddle over medium heat.
    • Add 1 tbsp butter.
    • Cook tortillas 2–3 minutes per side until golden brown and cheese is melted.
    • Press lightly with a spatula (“smashed” effect).
  6. Make dipping sauce
    • Whisk together mayonnaise, sriracha, lime juice, and honey (if using).
