Simple Cheese Enchiladas Recipe

  • 8 corn tortillas

  • 2 cups enchilada sauce (red or green)

  • Oil for softening tortillas

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Soften tortillas: Lightly fry each tortilla in a little oil for 10–15 seconds per side to make them pliable.
  3. Assemble: Spoon some cheese (and onions if using) into each tortilla, roll them up, and place seam-side down in a baking dish.
