Healthy & Moist Sugar-Free Cake

Ingredients (8–10 servings)

  • 2 cups whole wheat flour (or all-purpose flour)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon (optional, for flavor)
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain Greek yogurt
  • 1/2 cup melted coconut oil or unsalted butter
  • 1/2 cup natural sweetener (like erythritol, stevia blend, or monk fruit sweetener; adjust to taste)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened almond milk or any milk of choice
  • Optional: 1/2 cup chopped nuts, raisins, or sugar-free chocolate chips

Instructions

  1. Preheat oven
    • Preheat oven to 350°F (175°C).
    • Grease and flour an 8-inch or 9-inch round cake pan.
  2. Mix dry ingredients
    • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. Mix wet ingredients
    • In a large bowl, whisk together applesauce, Greek yogurt, melted coconut oil, eggs, vanilla, and almond milk.
    • Stir in the sweetener until combined.
  4. Combine
    • Gradually add the dry ingredients to the wet ingredients. Stir until just combined.
    • Fold in any optional add-ins like nuts or raisins.
  5. Bake
    • Pour batter into prepared pan.
    • Bake 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and serve
    • Let cake cool 10–15 minutes before slicing.
    • Optional: top with sugar-free frosting, Greek yogurt glaze, or fresh berries.

Tips

  • Moistness: Applesauce and Greek yogurt keep the cake tender and moist.
  • Sweeteners: Adjust natural sweeteners to taste; some (like stevia) are much sweeter than sugar.
  • Variations: Add cocoa powder for a chocolate version or orange zest for citrus flavor.
